The key to a fabulous tasty salsa is fresh ripe tomatoes. Many tomatoes even many organic varieties are grow inside a warehouse with very little natural sunlight. Tomatoes love sunlight and there is no substitute for the nutrients the sun provides the green leaves and flowers of the tomato.

If possible find a variety of tasty heirloom tomatoes and grow them yourself. There is nothing like a fresh garden tomato rich with flavor and nutrients.

My son Carter knew the difference between fresh and store bought. When he was a toddler he refused to eat store bought tomatoes. Yet the minute one of our fresh garden tomatoes ripened he would sit out under the sun and eat them straight from the garden.

Sassy Salsa

  • 5 Fresh Roma tomatoes or 4 medium heirloom tomatoes
  • 1 shallot, 1/4 of red onion or 2 inches diakon radish, chopped finely
  • 1-2 garlic cloves, crushed
  • 1 lime, juiced
  • 1/4 jalapeño or more to taste, chopped (optional)
  • 1⁄4 red bell pepper
  • 1⁄2 cup cilantro, chopped
  • (Optional) sea salt or dulse to taste
For chunky salsa it is best to hand chop the tomatoes into small cubes. For quick salsa place all ingredients into a food processor and pulse chop.
