Vegetable Info: Cauliflowers are beautiful flower plants and are part of the Brassica oleracea, in the family Brassicaceae. It is an annual plant that reproduces by seed.

A great kitchen item I highly recommend for pates, crusts and shredding cauliflower is a food processor. Food processor can be fairly inexpensive. I love my favorite is the 7 cup Cuisinart from Amazon. They are great when you want to blend but not puree, they have more area space for chopping. My kids love to put all their salad ingredients into the food processor and pulse chop ~Chopped Salad~.

Raw Cauliflower Recipe: Spanish Rice Recipe

Spanish Rice

  • 1 head shredded cauliflower
  • 1 red pepper, chopped
  • 1/2 bunch cilantro, chopped finely
  • 5 green onions, sliced thinly
  • 2 Roma tomatoes, chopped
  • 1 recipe of Spanish Avo Mix

Spanish rice avo Mix
  • In a bowl mash 1 avocado
  • Add: 1 lime, juiced
  • 1 tablespoon basil
  • 1 tablespoon paprika
  • 1⁄2 tea garlic bread seasoning or garlic powder
  • 1⁄2 tablespoon Agave Nectar or something sweet
  • 1 to 1⁄2 red hot pepper, chopped finely
  • 1 teaspoon sea salt (optional)
  • 1 garlic crushed
  • 1⁄2 tea onion powder
  • 1⁄4 tea cumin
  • or you can replace all of the seasonings for a Taco seasoning or Chili Powder (Whole Foods Market carries a delicious Organic Taco Seasoning).
To complete your Spanish Rice raw cauliflower recipe toss the rice with this avocado mix or the low fat version below.

  • 1 Mango
  • 1 cup of grape tomatoes
  • 3 sun-dried tomatoes
  • 1/2-1 teaspoon cumin powder
  • 1 tablespoon chili powder
  • Sea salt and pepper if you like
  • I like to add a little chipote pepper
