Raw Tomato Sauce For Pasta
Enjoy this decadent rich raw tomato sauce for pasta, Spaghetti Love, top any of your favorite raw pasta noodles or as a dipping sauce for raw bread sticks. The key to this sauce is in the red bell peppers.
Until about a year ago I was not satisfied with any pasta sauce I made. One sauce I like and created was basically Spaghetti Love, minus the olive oil and red bell pepper.
Then one afternoon I went to a raw food prep class and a beautiful couple was demonstrating Italian recipes. Their sauce was amazing and difference from mine by the red bell pepper.
Red bell pepper adds a mild sweet flavor and olive oil gives the sauce a creamy texture. Spaghetti Love is the rich decadent pasta sauce, I was longing for since I went raw years ago! I hope you enjoy it also!
Spaghetti Love
1 ripe Roma tomato
1/2 cup sun-dried tomato slices
1 garlic clove
1 tablespoon Agave Nectar (1 date or 1 TB raisins works too)
1/4 cup chopped red bell pepper
1 teaspoon dried Italian seasonings
1 teaspoon fennel seed
2 tablespoons olive oil(optional)
feel free to add:
a couple tablespoons fresh basil
a bit of chopped hot chilies
sea salt to taste
Blend in a Vita Mix blender until smooth. I like to add 1/2 cup of chopped tomatoes for a chunky sauce.
Serve on top vegetable noodles. Shred vegetables with a cheese grater or spiral slicer. Vegetable such as zucchini, jicama, and any other root veggie work wonderfully. I have also used Sea Tangle Kelp Noodles. NowTHAT'S ITALIAN!
