Raw Pasta Recipe For Raw-violi's

This is one of our families favorite raw pasta recipe we like to call RAW-VIOLI's! Summer time is perfect for Raw-violi's because the sun works perfect to dry them out and intensify the flavor.

Raw-violi's are so quick and easy they only require 3 steps and 6 ingredients.

  1. Step: Make Basic Cheese Recipe
  2. Step: Slice Roma Tomatoes
  3. Step: Sun Dry or Dehydrate

#1 Step: Basic Raw Cheese
Italian Style

In a Vita Mix Blender or your favorite blender add:

  • 2 cups of Macadamia nuts (or your favorite nut and you may have to add something sweet for other nuts)
  • chunk of onion, about 2 tablespoon size
  • 1 lemon, juiced
  • sea salt to tasteBlend well
    Make it Italian add:
  • 1 to 2 cloves of garlic
  • fresh basil or dried Italian seasoning
    Blend well

#2 Step: Sliced Tomatoes And Stuffing

It is best to use Roma tomatoes, they have the least amount of liquid. With a sharp knife or the slicing blade on a Mandoline or food processor, slice tomatoes thinly. The intention is to create tomato wheels.

Now place on tomato slice on a plate or dehydrator sheet and top it with 1 to 2 tablespoons of the cheese. Then place another tomato slice on top, like a sandwich.

#3 Sun Dry or Dehyrate

Place Raw-violi's in the sun for 4 to 5 hours turning them over half way through. If you have a dehydrator, put them in the dehydrator for 4 to 5 hours at 105 degrees or until desired taste.
