Raw Gazpacho
In minutes you can enjoy delicious creamy raw gazpacho. I find raw soups to be so convenient and easy to blend up and pour over fresh pulse chopped vegetables. Fast food never looked so amazing or tasted so fresh.
Creamy Gazpacho
- 2 large tomatoes
- 1 small cucumber
- 1/4 cup of olive oil or 1/2 an avocado
- 1/4 cup of lemon juice
- 1/8 onion
- 1/4 cup sun-dried tomatoes (optional)
- 2 garlic cloves
- 1/2 teaspoon cumin
- Sea salt to taste
Place all ingredients in blender and blend until smooth. Pour over chopped:- Tomato
- Cucumber
- Red pepper
- Avocado
- Onion
- Fresh Basil
Serve cold or warm, Delicious!
