My favorite raw Mexican dish is a fresh raw taco salad. Filled with fresh salsa, guacamole, cilantro lime dressing and more, it’s better than any taco salad I have ever had.
Having company in town? Raw fresh taco Salads are great to serve to those who are new to raw foods. Most everyone loves fresh tomato salsa, mango salsa and guacamole.
Creating familiar foods for guests gives them an opportunity to relate to your new found fresh diet. Keep in mind most people are use to lots of salt and crunch. I like to buy a bag of cooked tortilla chips as a back up.
Taco Salad #1
Take 2 large cabbage leaves and fill them with mixed greens top with
- Guacamole
- Sassy Salsa
- Mac Cheez (mock sour cream)
- Vegan Nacho Cheese
- Taco Nut-Meat
- 1 ear of organic corn, de-cobbed
- Cilantro Lime Dressing
Taco Salad #2
2 large cabbage leaves and fill them with shredded romaine lettuce top with Mexi Salad Mix.
In a large bowl mix:
- 2 ears of corn de-cobbed
- 1 large avocado, diced
- 2 large tomatoes (heirloom work great)
- 1 cilantro, chopped
- 1 bunch green onion, sliced thinly
- 2 stalks of celery, chopped finely
- 1 jalapeno, chopped finely
- 1 red pepper, chopped finely
- Juice of one orange or lime
Toss ingredients together top on romaine leaves.
Cilantro Lime Dressing
- 1 cup cilantro
- 1/2 cup extra-virgin olive oil or 1/2 avocado
- 1/4 cup lime juice
- 1/4 cup orange juice
- 1/2 teaspoon sea salt
- 1 garlic clove, crushed
- 1/2 jalapeno or hot red pepper
- 1/4 teaspoon lime zest
- Fresh crush pepper, white or black, to taste
Blend in a blender until smooth.
