Raw Vegan Nacho Cheese
The birth of our family’s raw vegan nacho cheese:
Years ago while riding home from an outing my older son, Marc, said “I feel like eating nacho cheese.” At this point in our family all 7 of us were eating a 100% raw food diet.
Together Marc and I started tossing in cashews for the base, red pepper for color, and then continued with sweet, sour, salty, spicy and bitter. The recipe below is what we came to enjoy over the years!
Our Family Raw Nacho Cheese
Mexi Not-Ur-Cheez (Nacho)
- 1 cup cashews or any white nut
- 1 celery stalk
- 1-2 garlic cloves
- 1⁄2 red pepper
- 8 dry tomatoes
- 2 pinch salt
- handful cilantro
- 2 tablespoons red onion
- 1⁄4 jalapeno or more to taste
- 1 lemon, juiced
- 1 tablespoon Mexican seasoning or chili powder
- 1 date
- 1/4 avocado (optional makes it a bit more creamy)
Blend with enough water to create a creamy consistency. Adjust the flavors to your taste.
