LOW FAT RAW GREEN GODDESS DRESSING

The other day I took my daughter out for her 24th birthday to paint. The painting venue was at restaurant that served very health choices. I enjoy this because I get inspired from these places. I decided to order a wedge salad with tomatoes, onion and a couple slices of avocado. It was less than desirable but it gave me the idea to create my own wedge salad.

This amazing low fat raw green goddess dressing is so sweet and delicious. I poured the dressing over a head of iceberg lettuce with chopped tomatoes, green onion and shredded carrots with a sprinkle of dried dill. It was the perfect appetizer for dinner. My son, Carter, loves it too. I rarely add the Tahini as I love to keep my diet very low in overt fats but once in a while I love to add a bit of that nuts, bitter flavor to the mix.
Enjoy this dressing any way to you like from a low fat raw mayo to a dip for nori wraps. Any way you choose it is soooo YUMMY!

Low Fat Raw Garden Goddess Dressing

  • 3 celery stalks
  • 1 bunch of cilantro, parsley or dill
  • 5 dates
  • 1 lemon juiced
  • 3-4 spring (green) onion
  • (optional)1 to 2 tablespoon Tahini (sesame seed butter)

Blend until smooth and taste for needed adjustments. Adding different herbs will livin’ it up and change the flavor. If you find it too sweet add more lemon juice. It can also be a great dip for fresh vegetables. Due to the fresh herbs you use to make the dressing the flavor is so unique and delicious you can take this to any party and you will be the rave!
