Sun Baked and Dehydrator Kissed, Amazing Raw Breads, Crackers and Desserts
My dehydrator was so important when I first became raw, it helped me satisfy my crunchy cravings. With some experimentation, I soon found I could create wonderfully tasty crackers and intensify the flavors of gourmet raw food dishes. As long as the temperatures do not exceed 118 degrees (I never go above 105 degrees), your foods enzymes remain in the food.
The raw, warmed recipes are simple to create and do require a dehydrator or constant sun exposure. Some of the recipes are time consuming, I like to save those for special occasions or if I am just in the mood to play in the kitchen. I find dehydrating recipes remind me of my baking days (only easier) and the kids have fun too.
Raw, Sweet, Sun Baked Goodies
RAW OATMEAL and CHOCOLATE OATMEAL COOKIES- 2 cups Macadamia nuts
- 2 1/2 cups of soaked oat groats
- 1 1/2 cups coconut meat
- coconut water to blend
- 1 cup raisins or Goji Berries
- 3/4 cup dates or more to taste
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 2 tsp vanilla
Grind in food process with S blade until desired consistency. Make into cookie shapes and dehydrate at 95-105 degrees until desired consistency. You can leave the raisins whole and add chopped nuts also sprinkle with a little cinnamon. Trust me these are the best oatmeal cookies ever. - For Chocolate Cookies add powdered raw cacao and shredded coconut to taste.
RAW CANOLI This is an Italian dessert, a cookie that is cylinder shaped stuffed with a custard or whip cream. I use to love them, so of course I had to make them raw. Cookie: - 2 cups flax seeds, ground
- Second in a vita mix or blender add:
- 1/3 cup dates
- 1/3 cup raisins
- 1 1/2 tablespoons carob powder or more to your taste
- 1 teaspoon vanilla extract or vanilla bean powder
- Add enough water or young coconut water until it equals 2 cups in the Vita-Mix pitcher and Blend.
Slowly add and stir in the blended ingredients to the ground flax seeds.
In a tortilla press, cookie press or with a rolling pin, make individual round thin cookies and place them on dehydrating sheets (not on the solid Teflex sheets). Dry them for 1/2 hour.
Then roll the cookie up to make a cylinder shape and press the ends together to keep it from coming apart.
Finish dehydrating until the cookies are hard. Then fill the cookies with Young Coconut Custard (any flavor will do, vanilla, banana, lemon, raspberry, etc.) or Cashew Cream making sure that the custard or cream is thick.
You can make a pastry bag by using an empty plastic bag and fill it with the filling and then cut off one corner.
SWEET APPLE RAISIN BREAD - 2 cups of flax seeds, ground
- 2 cups whole flax seeds
- 4 cups water blended with 1 cup raisins
- Juice of one orange
- 1 handful raisins
- 1 apple peeled
- 1 tablespoon cinnamon
Place ground and whole flax seeds in a bowl add the blended raisins and water to dry ingredients. - Pulse chop apple and handful of raisins add to rest of ingredients.
- Sprinkle cinnamon on top and mix by hand all of the ingredients together in a bowl.
Smooth out onto Teflex(solid)sheets. Dehydrate at 105 degrees for a day or more making sure to turn them over. They remain a bit soft. This should make 4 trays.
Spread with raw almond butter and jam for a pBJ or spread with Cashew Cream Cheez, Jam, fruit and chocolate for a fruit pizza.
Banana Cakes/Crepes (raw pancakes) - 3-4 bananas
- 1 young coconut
- cinnamon, to taste
- vanilla extract or vanilla bean powder, to taste
Blend bananas and coconut meat using coconut water to blend until creamy smooth and thin enough to pour on dehydrator Teflex Sheets.
Dehydrate until dry on the top, flip over dehydrate until all dry. Serve with fresh jam. For crepes spread jam and Cashew Crème Cheez on top and roll up and top with more jam and Crème Cheez. These are so delicious.
Crunchy Raw Crackers, Breads and More
RAISING RAW FLAX BREAD This is a fun recipe to play with I am still perfecting it, so take time to play with it too!- 1 cup ground flax seeds
- water
- olive oil
- sea salt to taste
1. Blend flax seeds to a powder. 2. In a food processor with the S blade, add 1/2 water and 2 tablespoons of olive oil 3. Turn on food processor and slowly add ground flax in the top. 4. You are keeping the bread light, keep adding water if needed. Feel free to add a teaspoon of sea salt and a couple pinches of Stevia powder if you would like. 5. Once the seeds are wet enough and form into a dough loaf, let sit for 15 minutes. You can also roll the top in seasonings or sesame seeds. 6. Place dough loaf in the food dryer and let dry for 24 hours. I found it interesting how the flax loaf rises like heated wheat bread. Top with fresh fruit jam or make a butter with olive oil, salt and maybe even a bit of crushed garlic. ENJOY and have fun!
BASIC RAW CRACKER BREAD - 2 cups sunflowers seeds
- 2/3 cup soaked flax seeds
- 2 cups veggie pulp or carrots, processed finely
- 1 cup celery
- 1 1⁄2 cup chopped tomatoes
Blend in a food processor adding your favorite ingredients: - garlic
- onion
- Italian seasoning, herb or poultry seasoning
- Sea salt
Spread on a Teflex sheet and dehydrate at 105 degrees, turning in 4-5 hours or until dry on top. Dry until hard or desired consistency.
CREATIVE FLAXERS (crackers) Turn left over raw dressings, cheeses, sauces, or soups into raw flaxers. - Place enough flax seeds to soak up the liquid for 1 hour.
- Spread thinly on Teflex sheets.
- Dehydrate at 95-105 degrees until hard turning over after 5 hours.
Unique tasting crackers are created.
RAW BAGEL CHIPS- 2 cups sprouted buckwheat groats
- 1 date
- 5 garlic cloves
- 1⁄4 cup onion
- 1/4 cup raw carob powder (optional)
- 1 tablespoon caraway seeds, herb seasoning or any of your favorite seasoning
- 1 1⁄2 teaspoon sea salt
Blend in a food processor with the S blade until mixed well. Shape into thin circle bagels, and top with your favorite seasoning. Dehydrate at 105 degrees until dry. Makes 4 trays
strong>MEXI FLAXERS (crackers)- 3 garlic cloves
- 1 small onion
- 2 jalapenos
- 2 celery
- 4 carrots
- 3⁄4 cup soaked pumpkin seeds
- 5 cups flax seeds
- 4 tomatoes

- 1 red pepper
- 1 bunch cilantro
- 2 tablespoons Mexican seasoning
- 1⁄2 tablespoon cumin
- 1⁄2 tablespoon sea salt
- 2 limes juiced
- 1 tablespoon lime zest
Blend in a food processor. Spread on Teflex sheets. Dehydrate them at 95-105 degrees until dry on one side, flip and dry until hard.
