Quick, Sweet, Fresh Pizza Sauce
I found the key to a delicious homemade pizza sauce is the sweet flavor. Just like me, this is a fabulous, sweet, pizza sauce and it is full of fresh, delicious, sweetness.
It is important to use grape tomatoes, they are so sweet and have less water content then other tomatoes, you want the sauce to be thick and saucy! Adjustments to the flavor may need to be made depending on the type of raisins and the amount of sweet vs. sour with the lemon juice. The recipe should be enough for at least 2, 14X14 pizzas. Although it usually turns out different each time sometimes I am able to make more and sometimes less, fresh ingredients are unpredictable.
This sauce is also delicious over pasta or raw zucchini pasta. If there are left overs, feel free to add some flax seeds to the sauce, let them soak for an hour and spread it out on dehydrator solid sheets for Italian crackers.
Spreading the sauce on thick with the back of a spoon or small ladle works well. The layer of the thick tomato sauce helps to soften the raw pizza crust and helps keep the pizza moist too.
I also like to use fresh basil as opposed to dry. Fresh, especially from the garden, offers a superb Italian flavor. Use only enough to taste, it can turn the sauce a brown color (unless you don’t mind).
Most of all Enjoy and keep in mind, if you are what you eat then you must be SWEET!
