Raw Enchiladas

Raw enchiladas are one of the more labor intensive recipes yet they are worth the wait. Once in a while taking time to create a delicious raw food meal helps to transition from our former cooked food diet to a nourishing raw food diet.

These Enchiladas are perfect to introduce our family to a raw food diet or to share at a pot luck or local get together. Giving others an opportunity to see a raw diet is more than just carrot sticks and salads.


Echa-Raw-Da’s

1 batch each of:

Put enchilada together by:

  • Take a Green tortilla and top with a bit of Chili Red Sauce.
  • Fill with Mexi feeling
  • Roll up and top with lots of Chili red sauce
  • Vegan Nacho Cheese
  • Guacamole
  • Sassy Salsa
  • Mac Cheese
  • Chopped green onions and raw olives.

This is even better than any cooked enchiladas I’ve ever had.

Chili Red Sauce

  • 1 or 2 tomatoes
  • 1/2 cup dried tomatoes soaked
  • 1 onion
  • 2 garlic cloves
  • hot pepper or cayenne
  • 1 teaspoon cumin
  • 1/2 teaspoon raw cacao powder (raw chocolate)
  • sea salt to taste
  • water

Blend all ingredients in blender adding water until you reach the desired consistency.
Pour on top of any Mexican dish. Will keep in the frig for 2 weeks.
